Pouilly-Fuissé – appellation for the finest white wines of the region Mâconnais in Southern Burgundy, founded in 1936. Pouilly-Fuissé wines are made exclusively from Chardonnay grapes. They are well maintained and can be stored up to 20 years or more, getting even more elegant body and flavours.

Pouilly-Fuissé from Domaine Merlin has a beautiful yellow-greenish hue, combined with a rich aroma, opens with notes of white peaches and pears. The wine is round, oily, smooth, mineral in taste and very fresh. Has a long persistent aftertaste.
Appellation Pouilly-Fuissé divides appellation Saint-Véran into two parts, and in its northern part wines by the both names can be produced.

Historically, this appellation was Saint-Vérand, but the last letter was “lost” due to an error in administrative records over 30 years ago. As the southernmost appellation of Burgundy, it is adjacent to the northern part of Beaujolais, and most of the crop previously would fall rather under the title of Beaujolais Blanc and the rest of it in terms of quality and characteristics of the wine falls between Pouilly-Fuissé and appellations of the village Mâcon. All the wines in Saint-Véran are made exclusively from Chardonnay, traditionally dry, but more full-bodied, which distinguishes them from other white Burgundy wines. At a young age, these wines have a floral fragrance with notes of stone fruit, but with as they maturity they develop honey and nut tones.

Saint-Véran from Domaine Merlin – is a wine with golden-greenish hue and a scent of white flowers. An elegant wine with a pleasant elasticity, combined with an attractive fragrant freshness. Best flavors reveal at the age of 2-3 years.

Mussels cooked on your choice in 6 different sauces. Half kilo of mussels with a side salad and a glass of French white of rose wine Domain du Tariquet – 170 UAH.

This week we also serve lobsters! Choose a lobster and our Chef will cook it deliciously any way you want it.

We are pleased to announce the performance of a great trio “Imaginarium” – a unique female vocals, guitar and contrabass. You will hear a trembling French chanson, lyrical jazz and world’s hits.

Domaine Merlin was founded in 1987 in the village of Roche-Vineuse, at the foot of Mâcon Rocks. Its founders , Olivier and Corinne Merlin, are the true masters of wine-making. To treat each vine as a living being , as a man – a philosophy that Olivier and his entire team practice at their vineyard every day. Most of the work at the vineyard is done by hand, with great care and respect for plants and their environment , in Merlin house synthetic fertilizers and weed killers are not used at all, and for the vinification and aging both white and red wine oak barrels are preferred. Olivier Merlin is deservedly considered one of the best wine producers in the most dynamic region of Burgundy – Mâconnais.

Wine house Domaine Merlin represented in our wine list with such wines as Viré-Clessé Terroir de Clessé, Pouilly-Fuissé, Saint Véran and Puligny-Montracher 1er Cru Sous Le Puits.

Viré-Clessé Terroir de Clessé

Appellation Vire Clesse was created relatively recently, in February 1999 (harvest of 1998 included). Its main purpose was to separate a small area, which is not subject to a titled wine Pouilly, but that also contributes to the production of quality white wines. Bound by the law of this this appellation, it includes only the driest white wines, with the lowest level of sugar residue. Vire Clesse is made exclusively from grapes of Chardonnay and are similar in style to their direct neighbors Pouilly.

Wine Viré-Clessé Terroir de Clessé from Domaine Merlin has a wonderful golden- greenish tint, with the flavors of Muscat grapes and exotic fruits. Well-balanced, full-bodied, rich in taste. Even when served not very chilled, expresses its individuality.

Billecart-Salmon Brut Réserve et Rosé

Two hundred years are hidden behind the name Billecart-Salmon, the wine house that produces titled champagne from the best grapes of the French region Champagne. Family production was started by Nicolas Francois Billecart and Elisabeth Salmon in 1818 in France and to this day it maintains the traditional quality selection of grapes – part of it grows on 15 ha of vineyards owned by the wine house and the rest is supplied by the best winegrowers that has earned their reputation through many years of cooperation with Billecart-Salmon.

Despite the rapid development of technology, computerization and automation of many processes Billecart-Salmon winery isn’t equipped with computers, and the entire production has no more than 25 employees. The house sells about 1.5 million bottles per year, and due to its delicate bouquet and a vintage style, Champagne Billecart-Salmon surely deserved to be included in the lists of the most prestigious champagnes in the world.

The process of secondary fermentation of Billecart-Salmon takes place in glass bottles in special cellars that were built by the founder Mr. Billecart. Before it gets on the shelves for sale, it’s aging in cellars for at least 4 years. This way champagne gets its elegant and full-bodied flavor and becomes balanced in taste.

Champagne Billecart-Salmon Brut Reserve, presented in our wine list, has been produced since 1945. This blend of three grape varieties (Chardonnay, Pinot Noir and Pinot Meunier) gives a fresh aroma with hints of pear and balanced taste, leaving a long and consistent aftertaste.
